rainbow layer cake!

ever since i saw this cake on pinterest, i have been dying to make it. we finally got around to it!

ok so the color part turned out awesomely. we made our own buttercream frosting instead of the meringue frosting because we didn't have enough eggs. too bad there wasn't enough icing to ice the outside! also, the actual cake was kinda spongey (maybe because it called for just egg whites?), and the taste was not that awesome. next time i think i'll just use a white cake mix.

father's day

berry awesome thing and homemade strawberry gelato. get in my tummy.

lets get together

If there's one thing that all of my State College friends enjoy, it's an outdoor get together on a warm summer evening. This includes (but is not limited to) music, food (duh), and fire.

HOMEMADE POPCORN! can't get enough of this stuff in my mouth.
How pretty is this fruit?!
Have you seen these mini soda cans!? So cute!
Frost your own cuppycake! How fun!

oh my thai

Thai Red Curry (tofu, yam, peas, onion, cilantro over jasmine rice in coconut milk and red curry)

Georgetown Cupcakes

A few weekends ago I took a little trip to visit my brother and sister-in-law. They live in DC. Since it was my first time visiting them, I had to (obviously) get a cupcake at the famous Georgetown cupcakes shop! If you don't know about this bakery, it's run by two sisters and has a reality type show on TLC. Before actually tasting one, I wondered how good a cupcake could actually be...how could there be a 15+ minute line every day, ALL day long? What is all the hype about? Anyways, I got a coconut cupcake, and Tim got his favorite: red velvet.

So many cupcakes!

Well, I've been converted. I've never been much of a cake person, but these cupcakes are out of this world delicious. The frosting is unlike any other, and the actual cake part was the perfect heaviness and texture...not to mention the taste! Let it be known, Georgetown Cupcakes are worth the long line!

I JUST LOVE SUMMER SO MUCH

when mentioned, summer summons up fond memories of long days at the pool, owning the neighborhood with our walkie talkies and bikes, late night capture the flag, day camp, and BBQS.

look ma, i made it myself!

i forget the exact name, but basically it's spaghetti with grilled veggies and a tomato/olive sauce. topped with goat cheese.

PA's own

you haven't lived until you've had birch beer from amish country. i love pennsylvania.

breakfast for me

fresh fruit salad topped with vanilla greek yogurt.

summer salad

simply put. lettuce. green beans. potato. tuna. hard boiled eggs. olives. tomatos. homemade dressing.

fish taco night

fish tacos always seem to get a bad rap. maybe it's because of nasty long john silvers. or the school cafeteria smelly fish sandwiches. whatever the reason, i'm here to bust that myth that fish tacos are less than desirable. my mom's tilapia fish tacos are the bomb! add some avocado, spanish rice, and some saucy stuff, and voila! yumm-o

fancy pants

screw the cereal, mom made special sweet popover stuff for breaky! (topped with greek yogurt, brown sugar, peaches and strawberries) tim and ali came home for memorial day weekend and brought some friends along for the fun. it was a perfect saturday for eating breakfast outside.

the reason i'm not vegetarian:

earlier this year, i tried being vegetarian for a week. i found out i could do it successfully. i can live without chicken. i can live without ham. but, i am in love with steak. pretty much give me any kind of steak, and i'm a happy camper. i also like tots. and mango.

it's kind of a funny story...

on the night this delicious salmon was grilled up for dinner, my parents thought i had gone to a friend's house. so they ate without me while i waited patiently for a dinner bell that never rang. sounds kind of sad, but it was mostly hilarious.

summer at last

hot dogs. fresh fruit. eating outside. summer has arrived at last.
